@frasca cool! I just found a recipe online, waded through the posts saying "it ain't paella if you use the wrong pan!", bought the correct rice and followed the recipe ( this one included chicken) and it was great! I'll do a fishy version next time.

Living the dream! This is my homemade jambalaya, which I made for dinners on the road. I also made spaghetti, and red beans and rice. I figure I have nearly two weeks of dinners, which will save a ton of money. And it's way better than truck stop diner fare.

Here is the #jambalaya I made last night.
I used brown basmati rice, kidney beans, black beans, sweet potato, onion, garlic, red bell pepper, chicken thigh, vegetable broth, and okra.
I seasoned it with salt, pepper, ajwain, cumin, TJs Chile lime and Ajika blends, and just a little bit of harissa paste.
On a rainy, gray Sunday, I decided to do a jambalaya challenge. Both were very good. Spicy was VERY spicy, jazzy was cool... probably because of all the cool jazz they added...
