My family hails from southern China, and we called it "#jook" or "juk"--there's no real standard western spelling for it. Other Asian cultures have similar sounding names for it. Where the hell did congee come from?! I've NEVER heard anyone use this word except in western media.

Seriously a darn good batch of jook. It’s was my grandmother’s tradition to make a batch from the turkey carcass, but she didn’t have a recipe. It took me years to figure out the right ratio of rice to broth, and 2 years with this new stove to find the right amount of heat and time.
