Warm salad of roasted butternut squash and cauliflower with quinoa, chickpeas, green onions, raisins and a delicious garlicky balsamic lime dressing. Served with cooked frozen spinach.
Dessert will be chocolate cherry n'icecream over frozen blueberries and mango chunks, black bean chocolate chip brownie with sprinkles of goji berries and cacao nibs.
