My wife and I made this Persian dish from her hometown of Shiraz for dinner. It's called kalam polo—cabbage rice. We use dill, tarragon, and basil, and the cabbage itself is tangy from lemon juice. Yum! It's usually eaten with tiny little meatballs, but I'm vegetarian, so my wife makes vegetarian meatballs instead.
