Hard to take a proper photo as I’m making a bunch of other stuff but was able to get some really beautiful kingfish today so immediately thought of a nice crudo
Marlborough sea salt, lime juice, a touch of Thai fish sauce, kumquat peel, kumquat juice, kaffir lime leaf then some olive oil.

This ultimately led to a stint with #Kingfish. In the mid-80s. Here’s a decent recording of one of the shows from that era.
