Roast witlof with feta, walnut and honey - yum. The is halved, roast 30 mins 200°C, the other bits sprinkled over to cook for the final 10 minutes. Served with a nice grain like pearl barley.

Blackened sweetcorn chaat - a delicious zingy starter/snack, another instant hit from Meera Sodha's "Fresh India". It's sweet and vibrant, balanced by cumin & black pepper spicing, ! Great as a starter.

Fresh matar paneer (from Meera Sodha's "Fresh India") -- Neat idea to twist the classic cheesey-peas dish to make it more fresh, like a bumper crop of green beans. Easy, and handy.

New recipe book #2 :) Tim Anderson's "Vegan JapanEasy". The writing is a bit too packed with lame humour but - almond jelly with mango & brown sugar syrup ("annin dōfu"), a delicious n stylish .

Lovely salad: witlof (endive), grape, new potato, dill, cannelini beans, spinach, mustard dressing. The sweet grapes balance the bitter endive superbly.

Tonight we made this lentil (urad dal) dumpling wraps with rhubarb pickle: theguardian.com/food/2023/apr/ The urad dal (new to us) is interesting - a fresh flavour (reminded us of beansprouts, or coleslaw), and it makes a good pattie because it crisped up very well. The rhubarb chutney was good, but the rhubarb was a bit buried (less nigella next time).

I made of cauliflower, kale and pomegranate seeds for our party - - highly recommended! It adds more interest and contrast to a plain cauli pakora. We oven roast them , easier & healthier than frying. No need to pre cook the cauli, just make sure you break/chop it into small 1-2cm pieces. Blob the mixture onto a baking tray, roast 220°C 20-25 mins.

Made this again: Witlof tarte tatin with date syrup, balsamic vinegar, and thyme mcld.co.uk/blog/2022/witlof-ta -- Pretty easy given how fancy it looks. (, , is common here in .) I served it with fried halloumi and a herb salad.

Our next experiment: "Millet Masala Khichdi" using this millettable.com/millet-masala- -- It's like dhal, combined with grain to make a one-pot Indian midweek meal. Very dhal in texture, unlike if we'd made it with rice. @vegan

Made this beetroot & black-bean yesterday thekitchn.com/recipe-best-ever (I didn't roast the beetroots, just raw grated - in my experience, no need.) It's a good recipe, great flavour, but as usual the burgers are prone to falling apart, despite the usual tricks with rice oats etc.
