I have successfully clarified butter, which, for a first time effort, required a lot of effort, many spills, and a blood sacrifice. Praise #AltonBrown for leading me out of the labyrinth of terrible internet methods.

I have a little left, I might try to puree it, add some suitable herbs and heat it up. But we'll see.
I think I'm learning from this that it's good to go with your instincts. If something sounds a little bland, it just might be. And when I feel that I want to add some flavour, then it's a really good idea to not get so stressed by everything that I forget what my plan was.
I even had the garlic sitting there. Shoulda chopped it before. Hmph.
I liked how the beans taste.
About my experiments with #LearningToCook. I had some butter beans that I wanted to use up and savoy cabbage that I thought would go well with it. Found several recipes, went with Creamy Cabbage n Beans. With onion, broth, crème fraîche.
It was really blah.
Some of the cabbage was bitter (though not all?), is that normal?
Was going to add more herbs but forgot (oops). Maybe my fresh thyme and some garlic might have rescued this.
Nightmare to stir the crème fraîche thro, total pain.

This using up foodstuff items of close to/past best use by date -that you might have otherwise chucked- can be quite exciting (well, maybe "exciting" is a bit too strong). You get to look into dishes and recipes you wouldn't have considered otherwise. I might increase my range! This is actually exciting.
Been having so much fun making pizzas with a tortilla as the crust, so easy and tasty! Here's a buffalo chicken pizza i made the other night, it was delicious

Made curry for the first time!
Coconut milk, onions, red bell peppers, minced garlic, turkey meatballs, badia curry powder, fish oil, lime juice, ground ginger, salt, black pepper, and some water. Delicious!

Gonna improvise a curry. I've got a pound of ground beef, a can of coconut milk, onions, potatoes, a bell pepper, minced garlic, curry powder, dry bay leaves, cinnamon sticks, lime juice, water, oil, red pepper flakes, and maybe some other things lying around. I think those are good ingredients. I wish I had ginger, cayenne pepper, and more coconut milk but this is what I've got. Thoughts?

Made pasta sauce for the first time with tomato paste, minced garlic, olive oil, canned diced tomatoes and green peppers, and seasonings. (Didn't have any fresh onions unforch.) It's pretty good but it feels like it's missing a richness? Or like a low, savory note? If that makes sense? #learningtocook #cooking #sauce
