Cheap lunch idea: leek and potato soup. Trick is to bake a very large potato wrapped in foil and let it cool overnight. Believe me, it makes all the difference. Sweat leaks right down in butter/oil (good 10mins), add cold cubed baked potato (incl skin), add 1-1.25 ltr veg bouillon & pinch black pepper, simmer 10 mins. Blitz. Thin down with water as desired.
