Yesterday #cycling took me to a different area in the Swabian-Franconian Forest: this is a view over the Trauzenbach valley from Murrhörle to Steinberg near Murrhardt.

In the times of the #RomanEmpire #Limes fortifications, protecting Roman settlements against raids from Germanic tribes, used to be near the houses on the far side of the valley. We're on the side of #civilization here.

FYI, this is what I did (if anybody is interested). To ferment 1.6kg of #limes:

✅ Chop limes into eighths
✅ Add 2T non-iodised salt (I used coarse sea salt)
✅ Add 6 or-so cloves of garlic (peeled)
✅ Add 1t of chilli flakes
✅ Add 1t of whole black peppercorns
✅ Stir with wooden spoon to ensure salt dissolves and coats all ingredients
✅ Keep stirring
✅ Once a good amount of juice has been drawn from the fruit, force the lot into your chosen vessel (I chopped one too many limes, and had to discard a few pieces - I should have stuck to 1.5kg...)
✅ Top-up lime juice with water if necessary to submerge all fruit, and agitate to mix
✅ Apply airlock
✅ Go do something else for at least a week

Anyway, my employer thought it best that I take today off as well (despite feeling OK, and still testing negative - as per their official COVID policy). We all did the calculations, and worked out that I had no more sick leave after yesterday, so they went to accounts to see if there was any possible resolution. According to accounts, I have not use *any* sick days on this job, which is patently untrue...

Thus, I am home on a brilliant late-winter day, in the far-flung outer burbs of one of the most livable cities on the planet.

My lime tree has been supercharged by the weather this winter/spring and is producing fruit faster than I can manage. I keep finding caches of limes hidden in my garden like Easter eggs. These will be part of the batch I squeeze and freeze into cubes.
