The sweet biscuit note is swirling around but, due to the ABV, is battling with the heat and spice. There's a vegetal note to this one too, peppery like Rocket leaves.

Palate: A nice semi-oily mouthfeel and initial smack of white pepper and pineapple syrup. Caramel and toffee provide a layer of richness. The new make berry element is more evident on the palate.

Palate: A nice mouthfeel. The sulphur note is more evident on the palate and is acoompanied by fruit pie, chocolate and plum flavours. A pepper element warms the tongue, but is balanced by berry sweetness and fruit syrup.

Nose: Quite a lot of the new make still evident in this one. That malty berry combination. There are some nice 'deeper' and richer notes too, from that sherry butt. Cinnamon, sugary stewed fruit pie, pastry and vanilla.

Palate: A pleasing mouthfeel, not hugely oily but it does have some viscosity. That sweet oak is there on the palate too, but is also a touch drying. Vanilla, caramel and Christmas spices (cinnamon, ginger and nutmeg).
