It’s beginning to look a lot like - my favorite red-green combination!
I do an overnight wet brine (this was Napa cabbage w/ julienned carrots and daikon) then my non-traditional mix is grated ginger and garlic, toasted sesame oil, Worcester sauce (it IS a fermented fish sauce), diced orange or tangerine for sweet, and a 2:1 blend of ground Aleppo chile (flavorful heat) and smoked paprika (ineffable umami). Three to five days at room temp, then into the fridge.
