Camarones del Rio (river shrimp)
They are like crawfish & can be found in remote streams in the hills above Jacó. Only locals know their exact locations
This was taken in local restaurant up there. Those are boiled yuca served with the camarones.

Highly prized in the Eastern Mediterranean, this aromatic gum, an ancient precursor to chewing gum, is purported to have digestive and antiseptic properties and grows only on the Greek island of Chios.
