And we got there....nearly 12 hours in the smoker.
Dinner was #lowandslow #smoked pork shoulder inna bun, and also on some #allotment potatoes. With a salsa made from allotment tomatillos and shallots, plus some of last year's fermented green chilli sauce. Some token-green leaves of New Zealand spinach make an appearance, plus some fried green beans.
Now very full.
One day I will learn to actually start the smoking earlier.

Wenn die Sonne nicht scheint, aber man einen dynamischen Tarif hat, wird ein Großteil der Energie zu den günstigen Tagesstunden verwendet, statt abends zur Peak-Zeit schlagartig auf einmal. #ServiceTröt #LowAndSlow

I don't think I've ever used a pan on a #lowandslow cook other than to just catch the fat/juices before hitting the flame. I would worry about it cooking dry and searing/burning the meat on the pan but the water pan may prevent that.
