Tried maitake mushrooms for the first time yesterday. Sautéed them in butter and then put them on a burger with Swiss cheese. Also had extra as a side. Very delicious! Meaty favor and texture. The only minor downside was the odd odor in my house after cooking them. I think I’ll start trying other unique #mushrooms that I’ve never eaten before.

@Rasta Maitake (hen of the woods) is probably the easiest to ID, but in NS they grow almost exclusively on old oak. And NS doesn't have much of that, and the hen is actively eating the tree.

We once found a 35lb maitake!

edulis/Porcini are the best dried, maybe better than fresh, almost. We have several jars from years past, and they smell slightly of fresh baked cookies when dried.
Scent gets stronger with age, no change to flavour however.

Its a fairly rare mushroom in the north and I dont think its particularly common in most of the UK so it might be interesting to record any you find with a fungi group ,and its best to pick only a small amount ,esp as some people have allergic reactions to it ,but heres all my Hen of the woods photos ,I found it under an Oak ,there was a very big group and a smaller one the opposite side

The new humidifier arrived and the maitake mushroom bag is now back in my mini-greenhouse grow chamber. Hopefully, the mushroom fruits mature before Friday because we're leaving for Thanksgiving vacation for a week.

I grew my bag spawn over the spring and had to fridge them all summer to wait for cooler temperatures. I am going to be so disappointed if the timing is screwed up on this bag. I haven't eaten a single maitake mushroom since I started this.

As of last night, I had a freshly opened bag of maitake mushroom spawn in my mini-greenhouse grow chamber with three beautiful maitake mushroom bulbs. And then my humidifier failed. I have one on order from ebay, but it's not getting here until tomorrow. I closed up my bag in the hopes I can salvage it.

Maitake takes up to 4 months to fruit. I kept this bag in the fridge all summer b/c maitake won't fruit until temps are around 70 degrees F.
