Should get a couple of tea plants, since you only harvest the first few leaves off each branch. Another one to wait until 2024/25, and probably put in the proposed allotment with the cinnamon trees. šŸµ

I wonder how many components of I could plant in one space, lol šŸ˜‚ Ginger might have to go in a glasshouse. Will look at clove and cardamom next...

I've been thinking about branching out from my tea hobby (White, Green, Black, rarely Oolong) and going into the Chai direction. I like strong tastes, so maybe Chai is even better for me. I just have to figure out whether vegan Chai is an option.

I have 2 favorite loose leaf places. One in Berkeley California called Blue Willow Tea. They make the most awesome black tea. The other is the Perennial Tea room in Seattle. Their tea tends to be a bit more floral. It all depends on whether you want Western style / Asian style tea and herbal/black tea.

Re black teas Blue Willow has an amazingly strong black tea called Ostfriesen that will wake you up bluewillowtea.com/

Lighter tea: darejeeling

First attempt at making a Masala simple syrup has been decent.
I do think it needs quite a bit more ginger (perhaps I should grate some instead of slicing it), and get some better cinnamon sticks. Should also look into if there is much of a difference between using cardamom pods, or just the dried seeds from them (which I used).
Definitely need to up the spice to water ratio too, or let it infuse for longer.
Using muscovado along with regular sugar gives an interesting extra depth, but may also have made it too sweet. (Though amping up the spices in general might help with that too, as I would need to add less of the to my freshly brewed .)
