If we're doing #MastodonFoodPorn, this is our dinner tonight...
Bake some large potatoes and when cooked, remove the flesh from skin and purΓ©e through a passetout.
Add butter, garlic, onions, and basil and mix.
Return to the potato skins and make a well in the middle.
Add the yolk of a raw egg and cover with finely grated Parmesan.
Return to the oven for 5 mins until the yolk has started to set and the Parmesan starts to bubble and brown π
