Today I made a delicious #salad from scratch! Part of a goal to eat more #homemade meals. Ingredients:
- Kale
- Water Spinach and some regular
- Strawberries
- Blueberries
- Celery
- Carrots
- Eggs
- Tiny bit of goat cheese crumbles
For the dressing I tried making a balsamic vinaigrette, and alternatively a Caesar dressing. But in the end I went with Panera's Caesar because the two I made didn't taste good.

So today I've made an ice cream base and cookie dough*. If you'll note neither of these things are suitable for lunch/dinner this week.
*An attempt at low sugar gluten free vegan, the dough tastes ok, whether I get something that bakes into a cookie is a different question, might have to pour it into a pan and call it blondies, going to decide after it sets in the fridge.
A few months ago I chopped an entire giant bag of nuts at once in the food processor so that I could have them ready for baking and only need to clean it once. It was so successful I used it up. I'm starting a second giant bag that I chopped today, but this time all baked good with nuts will feature almonds for the foreseeable future.
And no, I'm not getting paid (even in nuts) by Diamond, this is just what has been available in large quantity at the local grocery outlet.

TIL: Bulgar wheat apparently does have a finite lifetime in the pantry. I'm not sure how old the container was, but it seemed to soak way too quickly and then couldn't be wrung out enough to be fluffed.
My tabouleh is always very heavy on the parsley, so this doesn't look too different from normal, but the bulgar is weirdly sticky.

First attempt at a yeast-risen cranberry nut (walnut) bread. Not bad, but maybe need more sugar to balance the cranberry acidity?
I love this flavor when it's crusty bread, which I don't do so maybe I won't pursue this any further for now (though I still have >100 g of chopped cranberries in the freezer...).

Fourth attempt at oatmeal molasses bread and I *finally* got some oven rise. It's not perfect, but it's much better than attempts 2 & 3 (2 was an unrisen brick that I sort of had to make myself eat because I try not to waste food).

I finally finished the 2kg bag of chocolate chips I bought last year. I needed 125 g for the recipe and had ~170 left, so uh, extra chocolate-y cookies? Maybe using the "power flour" will compensate?
Also dough seemed weirdly greasy (and I've made this recipe *a lot*), not sure if I made a mental math error or what...will find out tomorrow how they bake up.
Carrot-graham muffins. The internet concludes trying to make graham crackers from scratch isn't worth it so I bought TJ's, and now I need to make sure I use them for baking and don't violate my "no eating baked good you didn't make" rule.
It's been a while since I did the dried carrot thing and I forgot they bake very fast so the muffins look "burnt" even if they aren't really. I do think they came out a bit on the greasy side, will need to tweak this recipe a bit.
Still not sure wait to make of King Charles (also not really my cup of tee) but the #coronation #quiche sure works. I really did underestimate the estragon #mastonom
