Kveik yeast mead update. I was out of town for a week. I probably could’ve racked it before I left, but I knew it wouldn’t hurt to wait. Did that today. It’s hazy, but that’s an aspect of the yeast.
SG: 1.111. It’s now 1.000(!). The ABV calculator says it’s 14.57% alcohol. (Though it’s alternate formula says 16.02%).
I’m gonna let it sit for a while before bottling, but it’s drinkable now.
It’s also delicious.

I’m also brewing an espresso coffee mead right now.
I should see if I have any honey in stock. I haven’t madee any mead this year. Coffeee/espresso? Spruce/clove?
Voss Kveik mead update.
OG: 1.111
It’s about 3 1/2 days since I picked the yeast. It’s nowat 1.006 and still bubbling!
That means it’s currently 13.76% alcohol. It’s also very hazy, which I’ve read is typical for this yeast. If all goes well I’ll rack it on Saturday.

Brewing update (traditional mead using Kveik Yeast).
It’s been a day and a half. The Starting Gravity was 1.111. A little higher than I wanted, perhaps. It’s now 1.030. In a day and a half the Kveik has turned it into 10.5% alcohol. It’s still bubbling.
This yeast is a beast.

I’m brewing a small batch of mead using Kveik yeast from Voss, Norway (where some of my ancestors are from). It has a rep for being a hearty yeast that ferments quickly. I tossed it yesterday and it’s bubbling away like mad. By my calculations it’s already over 5% alcohol. It should finish around 12%.

In my new favourite obsession I've started trying different kind of mead.
Today we tried a very dry one flavoured with what I think its called "flowering quince", wild raspberries and sea buckthorn.
It was quite tart, yet fruity and had a character reminiscent of rose wine. Felt like summer

I cracked open a bottle of my three year old cranberry mead. Definitely more cranberry flavor with age.
Thermally optimized outdoor #refrigerator (being used for #homebrew #mead). This is #Reflectix attic #insulation. The left side is not insulated as that is where the heat is being vented on this model. Also, the back not insulated, either... haven't determined if there is tubing back there yet. Right side does not get warm when the compressor is on, so it is insulated. #diy #project
