This. This is my favorite meal. All home made. The bun, hot pickles, bbq beans, tater salad, pulled pork, and BBQ sauce. What’s especially sweet is the fact that I’m the only one that eats it. So when I spend the entire day smoking that pork shoulder, I get 20 individual bagged servings out of it that I freeze and enjoy throughout the year. Those beans get smoked at the same time as the butt, with last serving of previous shredded pork mixed in.

Fired up the Old Country Brazos today. Small brisket Flat. Got about 7 of my Brisket Taco Tuesdays out of it. Packed into dinner servings and frozen. One left out for tomorrow. I probably ate a couple taco’s worth of meat while I was shredding it.

Sunday Funday. A pleasant 65°. Smoking a small brisket with a Padron 1964 Anniversary Series and Laphroaig.
Might be a good weekend to fire up the smoker. Some smoked chicken today. A Brisket tomorrow? Both will be used for my Taco Tuesdays. I still have plenty of carnitas from a couple months ago stashed in the freezer.
