St Patrick's Day dinner for a Mediterranean Irish is, of course, Mediterranean. I made a creamy garlic and mushroom chicken dish served with rosemary garlic skillet potatoes, and mixed veggies. Made a few minor adjustments to the recipe by cutting butter and cream in half and adding some thin onion slices to the garlic and mushrooms. The chicken recipe is full of flavor!
