Baking a 2Lb/1Kg loaf today using Holdfast wheat. I left the bran etc in this time when I milled it. The first rise is something else: "leave to rise until doubled in size" ๐Ÿ˜ฑ

So, yesterday's "white" loaf experiment didn't turn out /quite/ as expected but ultimately it's a very tasty and well-textured loaf. The flavour is really good, and noticeably less powerful than a wholemeal loaf. It makes me realise just how much processing must go into the commercial bread process to make those pappy white loaves that sell in their millions every day (70% of 11 millionin the UK). I will try the same with the Holdfast and Yeoman grains and see what the results are (other than tasty).

Today in I'm trying a "white" loaf, again with grain and have sifted out all the bran (will be used to make muesli) with a 0.5mm sieve. It's currently at the autolyse stage and then it'll be time for the Saturday . It's all go here! Oh, and for a taste of things to come, we found a grooming video for Wire-haired Fox Terriers... m.youtube.com/watch?v=1bruhqee we're not going for the full coat-strip but we want to see the best way to handle him ๐Ÿ˜„๐Ÿš‘

Well, I must say that today's with the new and (population) wheat berries has taken my craft to a whole new level! I sifted out the bran using a coarse sieve and we'll have that for breakfast - it'll be left in next time. Delighted to say that my go-to bread recipe worked well for fresh-milled flour, and the flavour is just amazing. If anyone has recommendations for UK wheat berry suppliers, please shout!

First lot of wheat berries through my Mockmill! Unfortunately the first batch is used to clean any debris out of the machine during manufacture so I canโ€™t use it. The flour is really fine and looks great. Hoping to get my next sourdough done after Christmas. I canโ€™t wait. I have 3 x 3kg bags of wheat berries to try out - Emmer, Holdfast and Mulika.
