🥶 It’s cold out there — time to grab some soup! Sweat onion, carrots, and celery, add some tomato paste and cook for a few minutes. Add a can of tomatoes, all the leftover beans and veg from the fridge, salt, pepper, and some water. I also add a few dried shiitakes (which I slice near the end of cooking) and an herb bundle with leeks, parsley, thyme, bay leaf, and a couple of arbol chiles.
