The waters, #wetlands and uplands you see along the Napa River Bay Trail are part of an interconnected watershed system that drains into the San Francisco Bay. Except for the section north of Imola Avenue in the City of Napa, the route is also part of the ambitious 500 mile-long region-wide San Francisco Bay Trail, now a little more than half completed.

Dressing (make 30 minutes ahead)
4 tbsp oil
2 tbsp rice wine vinegar, unseasoned
2 tbsp honey
2 tbsp peanut butter (chunky is fine)
1 tsp sesame seed oil
1 tsp Dijon mustard
½ tsp dried ginger
½ tsp granulate garlic
¼ tsp Chinese 5 spice
¼ tsp dried mint
Salt
Basic Salad
4-5 cups of Shredded Napa cabbage
1 romaine heart shredded
4 green onions, sliced
1 cup course grated carrot
¼ cup dry roasted peanuts
Extras - Add what you like
1 cup of cooked meat
¾ cup red pepper, cut it strips
½ cup cucumber, cut in chunks
1 can of water chestnuts, drained
1 medium tomato, small wedges
1-2 celery stalks, thinly sliced on diagonal
1. At least 30 minutes before serving time, mix all ingredients for dressing, set aside.
2. Place Napa cabbage in a large bowl and with hand crush half of it. Add all remaining basic salad ingredients into bowl.
3. Add any extras you might like and toss evenly.
4. Just before serving, pour over dressing, toss to coat evenly.
5. EAT!
Note: If your Napa cabbage has small black specks on the leaves, it's okay. It's a natural part of the leaves.
