Today is #NationalBiscuitDay in the #UK.
Biscuits are what our North American friends call cookies or crackers (in the UK, cookies are only one type of biscuit).
To differentiate them from cakes (looking at you, Jaffa cakes), they go soft when exposed to air, whereas cakes go hard.
In my childhood, shops used to sell bags of broken biscuits to working class families like mine. We couldn't afford beautiful boxes of assorted biscuits like this one ( a treat kept for Christmas)
