Nightingale Cider are based in Kent, which means they primarily use culinary apples to make their cider. This makes them light, fresh, fruity and acid-driven. They're delicately aromatic and soft on the tannins.

These are full-juice ciders, rather than the commercial stuff that's often made from concentrates, and sometimes contains as little as 35% fruit juice. (Blech!)

Sam only uses wild fermentations, so sometimes you'll find some gentle fermentation character in there as well, adding to the interest.

I really like his Wild Disco (made with Discovery apples) and Tenterden — a still cider made from four varieties including (iirc) Falstaff and Bramley. It's off-dry with some lovely elderflower flavours from the fruit.
