Auf Plötzblog hat Lutz ein super Rezept zur Verwendung von Sauerteigresten veröffentlicht.
Besonders schön ist die Verwendung eines Vorteiges der 24 Std. im Kühlschrank geht. Man ist also in der Weiterverarbeitung recht flexibel, weil es nicht auf ein oder zwei Stunden mehr oder weniger ankommt.

#baking question:
How late in the process can I upscale #noknead dough by mixing in more flour, water and salt? I'm thinking 1-2 hours before baking should do it, followed by stretch and folds at 15-30 minute intervals to work them together.
The question is from a practical perspective. Let's say I've set a pizza dough in the morning, and only discover later in the day that we would like to have some guests so I need more dough. How flexible can I be?

Literally almost random experiments with the AP flour, different procedure, random retardation, de-retardation, & re-retardation periods, adding stuff at different times (like folding in dried milk powder somewhere in the middle of all this), blah blah blah....
Anyway, tastes good, is much darker, and also much smaller than I was expecting. Would be good to redo with real bread flour & more precision. Please see alt text. :)

More bowls of bread dough. This is after a third rise overnight. I treat this more like a batter bread than a dough. I kinda gently scrape it into a hot pan that I line with parchment (usually burning myself in the process) right before filling.
Bread should be out in a few minutes. Hopefully giving a loaf to the next door neighbors again.

Flours at 100%. Measurements for 1 loaf.
210g AP flour
210g KA Sir Lancelot
30g KA white whole wheat
=====
450g 100%
56g melted butter 12%
374g water 83%
=====
880g 196% (w/o salt, yeast)
1 Tb. kosher salt
0.5 tsp. yeast
I melted the butter & stirred it into the dry ingredients before adding the water. It tends to clump, but the clumps disappear when baked. If I put in fat last, it tends to separate.

Trying to see how much olive oil I can get into a loaf of no-knead with roughly a pound of flour. I don't see people putting fat in no-knead very much.
flour 450g 100%
KA Sir Lancelot 225g
generic all-purpose 225g
water 370g 82%
olive oil 5 Tb.
Diamond Crystal NaCl 1 Tb.
yeast 1/2 tsp.
Gave 2 loaves away & sliced one. Seems light on salt somehow. Will wait for feedback from others. Still want more rosemary & olive oil character.
By the way, punched this down twice. Should have either stuck with once or done the 2nd punchdown earlier.

Ok #bread #baking gang, I'm doing something dumb: I'm trying an #autolyse again. The last time I did this, the first rise was in fact better, but the 2nd one was worse, so I felt like it was a wash. Also, I'm doing #noKnead, so I'm probably getting some autolysis anyway. I was scared I was going to forget to add salt later, but I saw a suggestion to just throw it on top, which is what I also did with the chopped rosemary. Planning on baking 3 loaves Friday morning. WML. 🍞
