Well, a successful food experiment, of a sort.

Context – thanks to we can no longer get good unmodified organic milk without paying hahayoujest and then only intermittently, so I’ve been making my own.  But it’s gritty even strained and produces pulp ( ) which is difficult to handle and a bit inedible for me.  So...

I made soy milk this weekend and now in addition to my soy milk, I have a bunch of soy lees, aka okara. Last time I just composted it, but this time I’m hoping to find a use for it.

Apparently you can even make it into a kind of tempeh, but that might be too advanced for me.

@bundeskater Indeed, it's a lot of :) I have a rule to not make new tofu/soy milk before I used up all the Okara (I only have a small fridge, so I cannot really store it for long time). I usually fry it with a bit flax flour, a spoon of sourdough, and turmeric, to make "omelettes" (takes a bit practice though); or I make delicious patties with crushed Grünkern. Oftentimes I used up the okara before I ate the tofu, especially when I visit my parents (who really love the patties). @vegan@a.gup.pe

Yes, it's a bit time consuming, but it's 100% worth it. I usually cook the soy milk while I clean my dishes, to save some time. I also like using the -- it's to good to be discarded or used as animal food (as usual in the industry). @vegan@a.gup.pe

I love making tofu. Squeezing the soy milk out of the pulp is one of the pleasant things that I enjoy (although it is a bit strenuous). (Other activities are: pealing peanuts and kneading dough). Self-made tofu also is soo good ... I even have recipes that utilise the soy pulp (aka ) (I make patties and "breakfast omelettes").

Just a few months ago I ordered 5 kg "organic" soy; the bag is already empty (!) and I ordered another 5 kg bag (among plenty of other food stuff like lentils) ... That should hopefully suffice for a while again.

[2/3] I've never made for breakfast before I went . This is the result of quite some breakfast experimentation. The ingredients are (the pulp residue from making milk*), , and ground seeds.

I usually afterwards make patties for eating later, since the recipe is similar (just add different spices and a bit of flour and Grünkern).
