Lovely roasted potatoes (partially boiled before I put them in the oven): olive oil, salt & thyme for 20min took out, sprinkled with parmigiana cheese & back into oven for another 10min
Crispy on the outside & fluffy on the inside

My mom told me that her 92 year old Italian aunt has developed #gastroparesis and vomits whatever she eats. It makes me so sad to hear that the amazing cook that she was suffers from it. She had her own recipes for lots of great #Italian dishes and passed them on to my parents: #lasagna, #parmigiana, baked #pasta, #lemon pie, #pesto, sundried tomatoes and eggplants in oil…
