Here's my trick for growing Parsnips. Two good thicknesses of damp kitchen roll in a plastic tray. Sprinkle some parsnip seed and put the whole thing in a plastic bag at the top of the airing cupboard. Check EVERY DAY. As soon as they show a small white shoot plant up individually into soil filled card tubes. Harden off and plant out into their final positions as soon as the root just appears at the bottom. #Parsnips are very misunderstood. I confess, by myself for some of my life too. To appreciate, they need to be fresh--which can mean stored correctly--free of bitter, toxic brown internal blemishes, and cooked in liquid just enough to soften whilst remaining moist and sweet--not charred and fluffy as many seem to think.
Sadly, I've never found them in Southern Europe, not even the seed to grow them myself. They get confused, instead, with radish, which has comparatively little to offer but bland heat.

One winter, back in the 2000s when I grew vegetables in heavy clay, the parsnips were so hard to get out, that I was holding onto a parsnip and my partner was holding onto me, and we pulled and pulled and eventually got a parsnip out, falling backwards in the process. We must have looked quite a sight!
The bit we got out was c. 50cms long x 12cms wide - there was more in the ground that snapped off and we never got!
Checked on how the parsnips were growing now it's finally time to dig them up. Yeh, I have some big ones, and they go down quite deep. I'll need help digging them out 😆
