I’m sick as a dog. I had to show up for work yesterday to do the rest of inventory, Mother’s Day prep, and look after the juniors. Chefs are quitting or getting fired left, right, and centre. Our entire bakery team was terminated and our bread program has been suspended indefinitely.

This place is falling apart. I’m falling apart 😪

I am fried, I am fucking fried. I might kill the sadistic SOBs that are the event coordinators, who were fine with stacking four private events on top of each other on a SATURDAY, bar none the busiest service day of the week for the restaurant and café—

I’ve never been able to stick around for the initial reactions to my creations upon their release into the bistro & café. It seems I’m finalizing details on my last day of my work week and then just relying on the team to execute things while I begin my days off—

So I don’t know how the egg showpiece is doing. I didn’t know how the éclair was doing. I didn’t know how my Belle Hélène was doing. I didn’t know how my Forêt Noir macaron was doing.

Just. Blind.

Meanwhile, I’m losing my mind trying to manage the pastry team by myself with none of my fellow seniors around (and my head chef is running around putting fires out everywhere else). Not sure if I wanna keep climbing the ladder if it’s like this and more?

So I sliced my finger open in a pretty medieval way last night. Think of… a cheese metal wire cutter?… 🫣

Any chef will tell you that it hurts less and is more annoying to deal with when you get a cut or injury. Fiancé suggested I seal the wound with Superglue (🤘🏻so metal🤘🏻)…

…but it worked?!?!?

Since my head #chef is on holiday, I had to wait for him to return to work to pitch it to him. And I didn’t want to pitch it in a DM. But this is sort of a “start-ASAP” project, time was of the essence….

My Chef de Partie suggested I quickly sketch it and text the sketch then and there. My pesky perfectionism wouldn’t allow it… “Fuck you, drawn in ballpoint???”

ANYWAY. Not big on this rumoured giant chicken idea that my sous passed on to me and I had an “well if I were to do it—“ epiphany, which took and then just ran away like a freight train. I gave it too many seconds of thought and the concept crystallized too quickly and I just knew what this was and what the conclusion was. I feel… ~compelled~… to do this. Along with dread and fear, etc. etc. etc.

I have to do it. I have to execute this giant egg idea.

These last few months have me a little wrung out with coming up with stuff and beta testing. It’s deeply and infinitely rewarding at the end (I have creations in the showcase right now! OF COURSE THAT’S DOPE), but it’s also a private and lonely space, no matter how much colleague support/peer help and mentorship you receive along the way. Plus, my disease of perfectionism frays me so.

My head chef purchased these gigantic egg moulds and I heard he had some ideas for them already as display #Easter chocolate showpieces for our café (like, some giant chicken? I dunno 🐓) On the creative/R&D side of Easter this year, I feel perfectly alright with everyone else coming up with things and then me just trying to execute their ideas…

Challenge: You come in to work and at the top of your shift, you have to montage 40 galettes that no one on the team has ever put together before so there’s no reference or example to go by. And then you have to plate said galettes later that night for a 47-guest private event… and no one on your team has plated it before…. and your Chef is in and out of the kitchen so you can barely get an ask in…
