My brother gave me some grass fed Angus chuck roasts from beef he raised.
I decided on chili.

Thawed them then realized no Hungarian sweet paprika and no Spanish smoked Paprika. On order from #Penzey’s.

I chunked and browned, them. I added my whole chilis, pasilla, ancho, cayenne, guajillo, and chipotle. Salt, paper, garlic, onion, added water to cover and lightly braised them. Fully cooked.

Plan: drain, cooking down the braising liquid, freeze.
