I made Baghali Ghatogh again today, Persian fava beans stew with lots of dill and eggs. It's a real favourite for us, few ingredients, quick to make and so delicious!
I use the recipe below, but with double the fava beans and garlic and two eggs (for two portions). Use 1.5 tsp of turmeric and as they mention just enough water to cover.

I am irrationally in love with this book because, despite the inattention to vegetarian meals, the book is beautiful. Printed on thick, matt, almost textured paper with gorgeous photographs for each dish - I fell for it right away.
Also the story of the Author, Hamed, is a wonderful story of perseverance in Australia's tough stance on immigration - pursued in, then escaping his home country, eventually arriving by boat in Australia, getting a visa but not being able to work, putting that time to good use, and finally opening a restaurant that gained popularity quickly.
