Yep, a little bit of vinegar is good I reckon. If you do it right you end up with a hint of the taste of pickles without it tasting like a pickle sandwich. The other steps are important too: real butter (not unsalted, or “spreadable butter”, or margarine); bread must be fresh; cucumbers must be patted dry etc.

Also:

Asparagus Rolls:
- similar to cucumber sandwiches but don’t need the vinegar IMO
- I use good quality mayonnaise instead of butter for these
- roll a single medium thick asparagus spear in a single crustless slice of bread
