I already posted these in a reply, but gonna post them to my main TL with more contexet: I made some pierogis from scratch using a recipe from @practicalkitch@twitter.com and it was a success!

I don't cook a ton because I'm bad at the planning part, but I really enjoy it when I can make it happen. If you're looking for a tasty (and vegan-friendly!) option and have some lentils and potatoes, I can vouch for this being a great option: thepracticalkitchen.com/aloo-d

I doubled the recipe, made and ate a quarter of them with a friend last night, and still have the makings for another ~75 that will probably mostly go in the freezer for later.
