I was not expecting the level of research and insight as I got, considering I initially thought it would be just a cute look at a few pies through history. Stellar work all around, and well worth searching this book out. It's not just sweet, there's much more complexity just past the crust

This last chapter spins the concept on its head to say, apple pie is American because it’s a mirroring of the immigrant experience. On one hand, I’m amenable to reclaiming this dessert from the idea that “as American as apple pie” is about an in and an out group. But it’s tough to say this without also saying “Yeah but the colonization.” I don’t know. She’s not wrong about it symbolically, it’s just not, well, as easy as pie, let’s say

There’s a lot in this little paragraph. Maybe pie didn’t have a ton of competition with MREs. Interesting that this phrase is about mom and not about a significant other, like it was apparently more common to be in WWI. And then, just, I don’t know what to do with “Pie War” when the literal Holocaust was happening
