Bold Breakfast Opinion... poaching is The Best way to cook eggs.

You only can get the perfect poach if the egg is FRESH as the albumen is thicker around the yolk, meaning the egg holds together 'tighter' when cooking.

If not you *will* get the white breaking off into 'whisps' and stringy whites.

Treat a fresh egg to the perfect poach, it's meant to be!

These eggs were laid today, no stirring or poaching cup required.

Start of spring dinner - asparagus wrapped in prosciutto (speasoned, oiled, roasted at 425F for about 30 minutes, then finished with ribboned Parmesan and topped with poached eggs), with grape tomato, string bean, and asparagus quiche.

I learned how to poach an egg a couple of weeks ago thanks to an article that did the rounds.

- Fill a frying pan 2/3 full of water. This bit is important.
- Bring to a boil, then reduce to a gentle bubbling. For my induction hob it's 7/10
- Crack in eggs just above the water
- Wait 3 minutes
- Remove onto a plate using a slotted spoon
- Dry excess water with kitchen roll

No vortexes, messing with vinegar, etc. Quick and easy.
