I always try to keep my brew time around the 3min mark when doing #pourOver. It’s been quite challenging to hit that target with the beans I’m currently using though. I dialed up the grind size beyond the level I’m comfortable with, but to no avail: it still brews for way too long. Needless to say that cup was far from tasteful, and maybe borderline unpalatable.
I eventually accepted to run this bag by taste and ignore the atypical brew time.
Go figure 🤷 Still learning I guess
A new feature article is up at CoffeeGeek:
No-bypass coffee brewing as a method is hot right now, and new techniques and products are being introduced daily. Let's dive deep into this brewing method and the tools used to apply it.

I'm always interested in improving my #PourOver #Coffee game. This time, "chilled extraction".
I purchased a stainless steel ball from Coffee Alive that needs to be in a freezer for several hours, after which it sits on the mug. The pour over (or espresso) drips hot coffee on the frozen ball locking in desired volatile compounds that would otherwise evaporate away.
That's the theory. I've seen a few independent blind taste tests that seem to indicate it works.
I'll find out tomorrow.
I’ve been trying out different origins lately like Kenya, Bolivia, and others, but nothing satisfies my palate the same way Ethiopian beans do. I’m working my way through a roast from an Ethiopian producer for the first time right now and it might just be the best batch I’ve had so far.

Huh. I buy my #pourover #coffee from local GTHA roasters like Pilot, Detour, and deMello. I didn't know that they publish brewing guides (datasheets for coffee 😻😻) like this one:
https://www.pilotcoffeeroasters.com/brewing-parameters/parameter-guides/
I've always used 1:16 as the factor for water to coffee. But it depends on the bean!
Detour's Punch Buggy is a perfect 16:1 for drip. But Pilot's new Radial summer blend says 71.4g/1L, which works out to about 14:1 - so it turns out I've been using too little coffee and overextracting it!
When it's hard to dial in a new coffee, try immersion brew eg. with the Clever Dripper. #coffee #filtercoffee #pourover #pourovercoffee #cleverdripper #specialtycoffee #coffeeaddict #coffeeathome #brewathome

First experience with Rwandan beans: Surprisingly good! I didn’t think anything would match Ethiopian goodness but I stand corrected ☕️
Trying out some newly acquired Brazilian beans. Two takeaways so far:
1. God I missed #coffee (I’ve gone a few days w/o caffeine). Don’t get me wrong, I like and do have #tea as well but good coffee brings a different kind of pleasure that tea just can’t match.
2. Brazilian beans are fine. I can actually pick up on some hazelnut notes, but they don’t even hold a candle to the Ethiopian beans I’ve been enjoying prior to this batch.

After some failed first attempts at espresso yesterday, my morning pourover suffers from my pre-caffiene state forgetting to make sure I didn't have any leftover grind in the bin. Very overextracted and bitter cup. I am trying not to use this as an excuse to spend more money on another grinder. I will probably fail.
Cup was the same as yesterday, this is a marked achievement. Consistency is the first step to progress.
I lowered the temp another 2C, slightly less bitterness, but overall quality was maintained. I feel like I'm getting a handle on which knobs alter which values in the final cup, but the real test will be when I get some new coffee to try.
