Pulque is pretty good, but pulque curado is delicious and has replaced tamarind micheladas as my favorite drink in Mexico.

My favorites so far have been made with nuts; walnut was particularly amazing!

One Mesoamerican myth suggests this creature once used his human-like hands to dig into fermented juice of the agave plant and get smashed.

Today, a milky-white drink is still made from this juice. Named pulque, it is said to have a sour, yeasty taste. Yum!

A portrait of my babies for #FermentationFriday. Back in the fall of 2020, I started a culture with yeast blooms growing on wild grapes (Vitis riparia) in Saint Paul, MN. Inspired by #pulque, I've managed the system as an open #ferment for the last two years, taking it with me to California, Iowa, Texas, and Virginia. It'll happily eat whatever sugar source I give it, but grapes remain its favorite. #paleodrinking #sediment
