You're welcome. Stokes Purple potatoes tend to be long and skinny. I rub a little EVOO on the skins and roast in my air fryer (350ºF for 25 minutes) then refrigerate them (to make the starch resistant — not so quickly digested).

Then I eat them as a snack: cold, from my hand, like a banana (though I do eat the peel of the potatoes, unlike bananas). Same snack niche as a banana, but much more nutritious.

Sounds good. You might take a look at purple potatoes sometime. We get Stokes Purple® in the stores here, but there are quite a few varieties of potatoes with purple flesh.
