Don't throw out the pips and cores from quinces - dehydrate/ dry them and keep in a jar.
Seep a few in boiling water for a delicious tisane that is said to be perfect for colds and sore throats.

I have much loved recipes for quinces - quince paste, quince molasses, q syrup, q leather, q jam, quince aachar (indian q pickles), baked q, savoury dishes with q, dips with tahini, q vinegar, q honey, q relish, poached q, ....
I am torn between making 1 or 2 of these, and trying something new.
My hint for making quince paste? Add just a little rosewater. Oh my!

Yes they are no bigger than golf balls and as hard as nails, but they are like supercharged apples on steroids! Slice thinly (you will need a SHARP knife and a steady hand) and slide these slices under the skin of a chicken before roasting. They go well with roast pork too. Or microwave the slices for a while and add to an apple pie.
