I am thoroughly enjoying my Christmas book, Ravneet Gill’s “The Pastry Chef’s Bible,” and today have decided to start making one of her recipes - Earl Grey Prune, milk chocolate, and vanilla cream tart.
The prunes are currently macerating (isn’t that a delicious word?) in Earl Grey tea and lemon zest.
Eventually, I’ll bake a pastry case, and once that has cooled, the prunes will be covered with whipped chocolate ganache, and then with a vanilla and yoghurt bavarois.
Mmmmm, yum!
Dad used to make what he called “fighting prunes” by soaking them all year in Marsala, then bringing them out in time for Christmas sweets and cakes. I think these will be less combative, but still delicious.
