This cake recipe is a favourite birthday cake in our house. I made it for the first time 7 years ago for our 4th child, but my eldest has requested it every year since for hers, too.

She even baked it for me this year. (Last year, our 2nd child surprised me with this cake -- it's my favourite, too!)

Triple layer chocolate cake -- super easy to make, reliable, and a great base for whatever your imagination has in mind for decoration.

We're icing it this afternoon, but my newly-minted 8 year old has requested a Minecraft theme, so there will be lots of green grass and fondant creepers roaming around the top. ;)

It bugs my husband that I generally "wing it" when cooking for the family, but that's how it works when you've been cooking for a lot of people for a long time.

He bothers him because it means that a) he can't make the same "recipe" if he liked it, and b) there's a (IMO delightful -- I love the element of serendipity) lack of precision & consistency from one meal to the next.

This is a family favourite and it has been awhile since I've made it, so I'm going to whip up a batch tomorrow.

It uses base ingredients most Folks have in their kitchen already, and goes together in a snap.

Trade chicken stock for vegetable stock, and it's an easy vegan option. :)

I try to make sure there is a stash of portions in our freezer/cupboard. (Use a pressure canner for canning, not the Instant Pot.)
