Once everything comes to a boil, reduce the heat until it is gently but steadily simmering.
Over the next three hours, the magic happens. Check back on the pot every so often to give everything a stir and make sure it’s simmering. Sometimes I go a bit longer than 3 hours, sometimes a bit less. You’re looking for soft but whole beans and a rich gravy that will eventually develop.

Sauté the mirepoix and andouille for about 8-10 minutes until it’s all softened. Then add crushed/diced garlic and 1-2tsp of crushed dried thyme. How much garlic? I like a ton so usually 8+ cloves but as long as you’re using at least four there’s no wrong answer here.
Cook the garlic for another ~minute (until you start to smell it).

While the beans are boiling, render the fat from one 12 oz package of andouille sausage, diced. I do this in a bit if vegetable oil, but it’s not strictly necessary if you start cooking the sausage on low.
After you’ve rendered some fat and the andouille has browned, add your mirepoix (I do 1 red bell pepper (green is traditional), 5 ribs of celery, and one large onion). Salt and pepper to taste.
