Yesterday Michael declared this patch of rehabilitated pasture as "planted out." We counted over 15 species of food producing plants, some of which will eventually be thinned out as others grow into their spaces.

One of the most important things we produce on our #farm is #fat.

The #pigs we breed and raise are known for producing healthy quantities of lard. In fact, they produce more lard than #meat - a fact that's ok by us!

Because our animals are raised rooting around in pastures and mud bathing in the sun, this lard is also a potent source of B and D vitamins as well as oleic acid, which reduces cholesterol and prevents heart disease.

We recently harvested over 20 kilos of dried beans planted in our rotational pig pastures. This system is far from perfect, but while we are distracted by construction projects it's one of the only places we can grow larger short-cycle crops. The goal is to eventually have a harvest like this once a month, and as the soil improves in the pastures, harvests will only get better.

This week we had a mama pig give birth for the first time - which never grows old.

These babies will grow up as pigs should; with their mama and rooting around in the dirt for goodies.

Guinness has recruited 44 farms across Ireland to participate in a regenerative agriculture pilot that's focused on reducing greenhouse gas emissions from barley production by 30%.

This seems like a good thing!

Then again, I don't know anything about Guinness' environmental track record so don't know if this is them being a good "corporate citizen" or a token effort to make themselves look good.

Pt 2: First, there's the profound sense of gratitude - for the animals life, for the high quality fat, protein, collagen, and vital nutrients its body will provide, and for the invaluable work they do on the farm, generating fertilizer and plowing the fields.

I also wonder how many people might become vegans if they had to feel the shudder of death required to have a pork chop on the plate.

Pt 1: One of the most radical acts we can do is to grow our own food. Here on the farm we raise pigs as integral members of our planting cycle, but also to fill a fundamental need in our family diet.

Our lovely milk cow, June, has recently informed me she has weaned her current calf 😂. It's bittersweet - milking is the best part of my day. But she'll give birth again and we'll start the cycle anew.

We "calf share" here - a term I despise because it recognizes that it's unfortunately not the default way of doing things.

This means that our mama cows raise their babies. The calves drink their share, before and after we take what we need.
