The instant pot is a treasure for making rice pudding (and cooking beans). No need to stir, doesn't boil over, and I can just go do other stuff meanwhile.
Today's was made with purple sticky rice, almond milk, star anise, cinnamon and cane sugar. (yes, those are reused jam jars)

My mother taught me to put a bay leaf in the bottom of the casserole, and to start the milk, sugar and plump pudding rice on the stove, then transfer it to the casserole for cooking at a relatively low heat.
