Yesterday I ran 5 miles to #Shipley caught the train to #Skipton and jog/walked the 23.5 miles back to #Rodley along the #LeedsLiverpoolCanal It was something I always wanted to do but I never want to see a #canal path now for some time! Fuelled by #RoastPotatoes and tomato sarnies.

Lovely roasted potatoes (partially boiled before I put them in the oven): olive oil, salt & thyme for 20min took out, sprinkled with parmigiana cheese & back into oven for another 10min

If one isn't demanding that the potatoes be crispy outside/fluffy inside -- and I grew up eating roasted potatoes that were uniformly soft rather than crispy/fluffy -- then the boiling step can be skipped.
I discovered this boiling-before-roasting technique from a cookbook Hugh Fearnley-Whittingstall's mother published about 15 yrs ago with recipes from her grandmother.
