If you haven't done this before, it's really good. The NYT has a more complete recipe, but the idea is to boil small potatoes in *extremely* salty brine. There's so much salt in the water that the water doesn't look normal when it's boiling. When you're done, you just drain them then add butter & often an herb like rosemary (or not, as you prefer). wwnytv.com/2023/06/23/history-
