What makes nacho cheese do the thing that it does? How do nachos 'nacho'? Well, it's the NaCHO that let's the nachos 'nacho'. In cheese there's a molecule called Sodium Citrate - Na5C6H5O7. When you warm up a mixture of cheese, the sodium substitutes itself for some of the calcium that’s helping the proteins cling. The result is a stable, smooth, gooey melt.
