Finally found a manuscript that supports Thomas' use of colostrum ⲥⲁⲉⲓⲣ: a 6-7th CE Fayyumic MS, now at the Louvre.
Turns out that Shenoute's White Monastery Codex B (8-9th CE) also contains ⲥⲉⲓⲗ

And guess what? The Fayyum is a perfect match for the Nautic terms in Thomas (and the NT LOL) as well
