I’ve been using red beans instead of soy to make a soy sauce substitute for a little while now. Tastes a little different straight up, but cooked into recipes it’s identical. #shoyu #fermentation #koji
@maketo yes, this one is purchased here in the city, but back at our homestead we cannot buy tofu so we make it at home. Now next step to me is learning soybeans #fermentation, like #nato, #shoyu and #misso. I made a few attempts in the past but was not successful yet. Got a few books that a need to study. Hoping to get a remote job soon to move back to the countryside.

13 months ago, I started making 4 gallons of soy sauce. This required mixing 1 Kitchen-Full of soybeans and wheat with the mold spores of Aspergillus Oryzae, adding salt and water, and stirring regularly. Today I tasted it for the first time, and it’s fantastic. Fruity, funky, savory.
If you’re in Portland and want a taste (and are willing to show some courage in the face of a small but nonzero chance of botulism), I have enough to share.
